Today’s recipe... Mexican Chipotle “Sausage” & Veggie Fajitas w/Cilantro Lime Rice!

 

Introducing Meatless Monday's over here at Third Eye Threads and giving you weekly recipes! and we're kicking it off with this delicious Mexican Chipotle "Sausage" & Veggie Fajitas w/ Cilantro Lime Rice! you can make a bowl with it as pictured or serve with flour or corn tortilla's and make tacos! Enjoy!

ingredients

Marinade:

  • ¼ cup olive oil
  • 3 cloves garlic- finely minced ( use a garlic press)
  • 1 tablespoon apple cider vinegar
  • ¾ teaspoon kosher salt
  • 2 teaspoons chili powder
  • 2 teaspoons cumin
  • 1 teaspoon dried oregano

Fajitas:

  • 2 bell peppers
  • ½ red onion
  • 2 chipotle Mexican "sausage's" from Field Roast

Cilantro Lime Rice

  • 2 cups water
  • 1 cup long grain white rice
  • 1 tablespoon vegan butter (i like Earth Balance)
  • 1 teaspoon lime zest
  • 2 tablespoons fresh lime juice
  • 1/2 cup chopped cilantro

 

instructions

Preheat oven to 425F

Mix the marinade ingredients together with a fork in a small bowl.

Cut the bell peppers into 1 inch thick slices. Cut the onions into ½ inch thick wedges. Place on a parchment or foil lined baking sheet, not overlapping.

Brush with the marinade.

Roast in the oven 25-35 minutes, checking after 20 and giving a a quick toss if edges seem dark.

While this is roasting, make the Cilantro Lime Rice.

  1. Bring the water to a boil; stir the butter and rice into the water. Cover, reduce heat to low, and simmer until the rice is tender, about 20 minutes.
  2. Stir the lime zest, lime juice, and cilantro into the cooked rice just before serving.

and lastly chop up the sausages, suaté in a pan with a little bit of olive oil with medium heat for a couple minutes.

then when everything is ready to be served add it to a bowl and garnish with some cilantro!
